He didn't pick offensive talent well in Miami, but he found Aikman, Emmitt, and Irvin in Dallas, along with some other strong offensive talent.  I think luck plays a lot more into all of this than we like to admit.  
As for Shula, he was obviously a great coach---quite possibly the best of all time.  But it was pretty clear when he left that it was time.  There was a lot of mediocrity in Miami over the last 15 years of Shula's reign.  I think where Huizenga really messed up was talking JJ back into coaching when he tried to retire.  That's what brought Wanny in, which wasn't completely insane at the time, but it kept the team from starting over and doing a real job search the next year, which would've been the smart way to go (though, to be fair, Wanny did a good job as a HC in 2001).  Then, Huizenga kept Wanny at least one year too long, if not two.  Saban was a no-brainer at the time.  And of course, Cameron was a complete disaster---I'd argue he did more damage in one year than Wanny did in 5.... but I have to admit, I did not see that coming when Cameron was hired.
And again, luck plays such a big part.  One of the interesting things in that Cole article was the speculation that Saban would've stayed in Miami if Brees had worked out.  So many little things make such a big difference.
